Ingredients: 1cup basil leaves (about 1 ounce); ½cup granulated sugar; 1pound fresh tomatoes (about 2-3 medium tomatoes); 1teaspoon kosher salt; 5basil leaves; ½ounce basil simple syrup (see above); 2ounces tomato juice (see above); 1 ½ounces vodka; ½ounce lemon juice; ½teaspoon balsamic vinegar; Sparkling water or club soda (optional); ½teaspoon extra-virgin olive oil (optional); Any of the following to garnish: whole cherry tomatoes, ciliegine or “cherry size” fresh mozzarella balls, basil leaves, sliced salami
